In this episode, we welcome Tootsie Tomanetz, a legendary figure in Texas barbecue, best known as the pit master at Snow’s BBQ in Lexington, Texas. Even into her 80’s, she continues to work the pits every Saturday morning, a role she’s held since 2003 alongside owner Kerry Bexley. Despite her age, Tootsie is hands-on, preparing meats and tending the barbecue pits herself. Her journey into barbecue began in the 1960s, and over the years, she has become a beloved icon in the culinary world.

Snow’s BBQ gained widespread recognition after being named the best barbecue in Texas by *Texas Monthly* in 2008 and again in 2017. Tootsie’s no-nonsense, old-school approach-relying on wood-burning pits and traditional techniques-has drawn BBQ enthusiasts from around the globe. Her brisket, ribs, and signature pork steak are famous for their smoky flavor and tenderness.
Tootsie’s expertise and dedication have earned her numerous accolades, including a spot in the Barbecue Hall of Fame and multiple James Beard Award nominations. She was also featured in an episode of Netflix’s *Chef’s Table* in 2020, further cementing her status as a culinary legend.
Even though Snow’s is only open on Saturdays, people arrive early to line up, sometimes traveling from distant countries just for a taste of her barbecue. Tootsie’s work ethic and passion continue to inspire and set the bar for traditional Texas BBQ.
