There’s something special about a recipe that connects good food with great memories in the field. Whether you’ve spent the morning glassing the hill country or waiting quietly in a blind before sunrise, few things reward the hunt quite like bringing your harvest to the table.
This Big Game Steak recipe has been a long-time favorite among Texas hunters and ranch families alike. It’s hearty, easy to prepare, and packed with slow-baked flavor that tenderizes even the leanest wild game. Perfect for deer, elk, antelope, or moose, this dish turns any cut of wild game into a savory home-cooked meal worth sharing.
Big Game Steak Recipe
Ingredients:
-
2 to 3 pounds deer, antelope, elk, or moose round steak (1 inch thick). You can also use backstrap for this recipe.
-
½ cup all-purpose flour
-
2 tsp. salt
-
¼ tsp. pepper
-
1 to 2 tbsp. butter or margarine
-
2 to 3 tbsp. olive oil
-
3 tbsp. finely chopped onion
-
1 tsp. packed brown sugar per steak
-
1 tsp. ketchup per steak
-
Dried basil leaves
-
¼ cup venison stock (or beef broth)
Directions:
-
Preheat oven to 350°F.
-
Pound steaks to ½-inch thickness with a meat mallet.
-
On a sheet of wax paper, mix flour, salt, and pepper. Coat each steak thoroughly in the mixture.
-
In a large skillet, melt butter and 2 tbsp. of olive oil over medium-high heat. Add steaks and brown on both sides, working in batches if needed.
-
Arrange steaks in a baking dish and top each one with chopped onion, brown sugar, ketchup, and a light sprinkle of basil. Dot with butter.
-
Add venison stock (or beef broth) to the skillet drippings, stirring over medium heat for about a minute to loosen browned bits. Pour this flavorful mixture over the steaks.
-
Cover with aluminum foil and bake for 45 minutes. Remove foil and, if the meat appears dry, add a bit more stock or water. Continue baking for another 15 minutes.
The result? A fork-tender, flavorful dish that perfectly highlights the natural taste of wild game—ideal for family dinners or post-hunt gatherings.
